The Culinary Lens

I had some wonderful cacio e pepe in Marino, laziale last year while at a wedding in Italy. Caponata is a favorite of mine an I agree "salad" does not do it justice.. It is almost a Salsa or Chutney.

Wow - you're making me want to get back to Sicily again. I LOVE aubergines and great idea on the oily problem with roasting. Wonderful colourful photos, too!
